Crockpot love: Chicken and Vegetable Soup

Ingredients

salt or season salt

black pepper

red pepper flakes

herb season (basil, oregano, thyme. All or just one)

1 pound of pre-cut boneless chicken thighs

2 cups of chopped carrots, onion, and celery (I purchase pre-cut mix )

32 oz low sodium chicken broth

1 cup of raw kale

Directions

Liberally season the chicken with salt and pepper and whatever seasoning you typically use. Let chicken marinate overnight (not mandatory). Place chicken at the bottom of crock-pot. Top with vegetables mix. Add herb seasoning on top. Pour in 32 oz of chicken broth. Cover and cook on low for six hours. When timer finishes, add the raw kale and stir, and enjoy.

Confession: this started off as chicken and lentil soup. At some point I completely forgot to add the lentils right before pouring in the chicken broth. My mistake was only noticed after the soup was done (hmmm this doesn’t look right?). But I improvised and threw in two handfuls of raw kale and viola! Chicken and vegetable soup:-)
