8 Ingredient Sweet Potato & Curry Chicken
My cooking philosophy: Less is better. When looking for recipes, I stick to the basics and will skip any dish that has more than 10 ingredients. Spices included. lol. They make the cooking process so much longer and push you to buy ingredients that hike up the grocery bill. Some ingredients are also too specific to the dish, which increases waste because you might not use it again.
My 8 ingredient Sweet Potato & Curry Chicken is ideal for a hearty, easy, and kid friendly dinner.

Ingredients
1. Salt
2. Pepper – easy stuff right?
3. Seasoning salt
4. Curry powder
5. One medium onion
6. Olive oil
7. Cubed sweet potato
8. sliced chicken thighs
Directions
1. Season the chicken with all the spices and olive oil. All, except the curry powder, are exchangeable with whatever that’s in your cabinet! Let sit for 30 minutes
2. Add a layer of olive oil to the bottom of a frying pan (over medium heat)
3. Once oil is heated, fry the chicken until both sides are golden brown. Remove from pan
4. Add a little more oil if pan is dry. Otherwise, add onions and small portion of curry powder (about ½ - 1 full spoon). Stir until onions are soft.
5. In this order: add sweet potato, chicken, 1 cup of water or chicken brother if you want to get fancy 💁🏾♀️
6. Turn heat down to low medium and let simmer for approximately 30-45 minutes (until chicken is cooked through and sweet potatoes are soft).
7. Enjoy!
